    ❂ Ingredients:

    2-3 lbs beef chuck (leftover or deli roast beef works well)
    5 dried chili peppers
    3 cloves garlic
    1 cinnamon stick
    2 bay leaves
    Sourdough bread or hoagie buns
    2 tbsp butter
    3 large onions, sliced
    2 sprigs of thyme
    2 cups beef broth
    1 tbsp Worcestershire sauce
    Optional cheeses: Provolone, Mozzarella, Gruyère
    Salt and pepper to taste

    For the Horseradish Sauce:
    - 20g fresh horseradish
    1 cup mayonnaise
    2 tbsp crème fraîche
    2 cloves garlic, minced
    1 Tbsp of whole grain mustard
    Fresh parsley, chopped
    Salt and pepper to taste

    ❂ Cooking Process:

    1. Prepare the Roast Beef:
    - Deseed the chili peppers, cover with boiling water, and simmer for 20 minutes. Blend the softened peppers with onion and garlic.
    - Season the beef and sear until golden brown on all sides. Place in a baking dish, pour over the beef broth, add the chili mixture, cinnamon stick, and bay leaves. Cover and bake at 350°F for 3-3.5 hours.

    2. Caramelize the Onions:
    - Melt butter in a pan over medium heat. Add onions and cook until caramelized, about 15-20 minutes. Stir in the Worcestershire sauce and put thyme.

    3. Prepare the Horseradish Sauce:
    - Combine grated horseradish, grated garlic, mayonnaise, crème fraîche, mustard, and parsley in a bowl. Season with salt and pepper.

    4. Assemble the Sandwiches:
    - Slice the bread and spread both sides with the horseradish sauce. Layer with your choice of cheeses, shredded beef, caramelized onions, and another layer of Gruyère cheese. Top with the second slice of bread.
    - In a skillet, grill the sandwich on both sides until the bread is golden and the cheese is melted.

    5. Serve:
    - Serve the sandwich hot with a small bowl of the reserved beef juices for dipping.

    1 Egg
    1/2 Tsp Cayenne pepper
    1 Tbsp Paprika
    Salt and pepper to taste
    1 cup Flour
    2 Hamburger buns
    4 slices Bacon
    Pickles, sliced
    1 CupCabbage, shredded
    Scallions, chopped
    1 Tbsp Dill, finely chopped
    1/4 cup Kewpie mayo (for both the burger and sauce)
    For the Sauce:
    1 Tbsp Creamy horseradish
    1 Tbsp Mustard
    2 Tbsp Kewpie mayo

    ❂ Cooking process:

    1. Marinate the chicken:
    - In a bowl, combine buttermilk, egg, cayenne pepper, paprika, salt and pepper. Whisk well.
    - Add the chicken breasts to the mixture and let it marinate for at least 30 minutes (or overnight for extra flavor).
    2. Prepare the coating:
    - In a separate bowl, mix flour with a little salt, pepper, and an extra pinch of cayenne pepper if desired.
    3. Bake the bacon:
    - Cook bacon in a oven until crispy. Drain on paper towels and set aside.
