• Fried Zucchini Chips with Tzatziki

    This recipe was filmed and edited as part of our Art Factory training course. It was our third live project. Two days ago, we did a live stream where we filmed this recipe, and yesterday, the video was edited during a live session.

    ❂ Ingredients:

    2 medium zucchinis
    2 cups all-purpose flour
    Pot of ice-cold water
    1 teaspoon salt (adjust to taste)
    Vegetable oil for frying

    ❂ Cooking process:

    1 Wash the zucchinis and cut them into thin slices, about 1,5 mm-2 mm thick.
    2 Place the sliced zucchini in ice-cold salted water.
    3 Dredge the zucchini slices in flour, ensuring each piece is evenly coated. Next, quickly dip them into ice water—this step will help maintain their crispness.
    4 Finally, fry the slices in hot oil (350F)until golden and crispy. This method ensures the zucchini retains a delightful crunch.
    5 Remove the zucchini chips from the oil and place them on a plate lined with paper towels to drain excess oil.
    6 Serve hot, optionally with a sprinkle of extra salt and a tzatziki sauce for dipping.

    For Tzatziki Sauce

    2 cups Greek yogurt
    1 medium cucumber, grated and drained
    2 cloves garlic, minced
    2 tbsp olive oil
    1 tbsp lemon juice
    1/2 tsp dry mint
    Salt and pepper, to taste

    ❂ Ingredients:

    4 large russet potatoes
    2 tablespoons olive oil
    6 tablespoons unsalted butter
    1 garlic head
    6 sprigs fresh thyme
    2 cup chicken broth
    Caviar
    Salt and freshly ground black pepper to taste

    ❂ Cooking process:

    1 Preheat Oven: Preheat your oven to 425°F (220°C).
    2 Prepare Potatoes: Peel the potatoes and cut off the ends. Cut each potato into 2-3 inch cylinders. Use a round cutter for perfect round. Rinse them under cold water and pat dry with paper towels.
    3 Sear Potatoes: In a large, oven-safe skillet, heat the olive oil over medium-high heat. Add the potatoes and sear until golden brown, about 6-7 minutes per side.
    4 Add Butter and Aromatics: Add the butter to the skillet. Once melted, add the cut garlic head and thyme sprigs. Season the potatoes generously with salt and pepper.
    5 Add Broth and Roast: Carefully pour the chicken broth into the skillet (it may splatter). Transfer the skillet to the preheated oven and roast the potatoes for 30-35 minutes, or until tender. Halfway through roasting, baste the potatoes with the butter and broth mixture from the skillet.
    6 Serve: Remove the skillet from the oven and let the potatoes rest for a few minutes before serving. Serve with squeezed garlic and fresh thyme leaves or any caviar on the top.

    3 scoops of vanilla ice cream
    Melted chocolate or Nutella
    Nuts crumble (pistachios and peanuts)
    White chocolate candy – 1 piece
    1 shot of espresso

    ❂ Cooking Process:

    1. Chill a mug in the freezer until it’s cold.
    2. Place 3 scoops of vanilla ice cream into the chilled mug.
    3. Use a spatula to smooth the ice cream, packing it tightly into the mug.
    4. Carve out a round hole in the center of the ice cream.
    5. Pipe chocolate around the rim of the mug using a pastry bag.
    6. Turn the mug upside down and dip the rim into the nut crumble, making sure the nuts stick to the chocolate.
    7. Place the white chocolate candy into the hole you’ve carved out.
    8. Pour the shot of hot espresso directly into the hole over the candy.

    Serving:
    Serve immediately, enjoying the mix of cold ice cream and hot espresso. 🤌🏼☕️
