• Fried Zucchini Chips with Tzatziki

    This recipe was filmed and edited as part of our Art Factory training course. It was our third live project. Two days ago, we did a live stream where we filmed this recipe, and yesterday, the video was edited during a live session.

    ❂ Ingredients:

    2 medium zucchinis
    2 cups all-purpose flour
    Pot of ice-cold water
    1 teaspoon salt (adjust to taste)
    Vegetable oil for frying

    ❂ Cooking process:

    1 Wash the zucchinis and cut them into thin slices, about 1,5 mm-2 mm thick.
    2 Place the sliced zucchini in ice-cold salted water.
    3 Dredge the zucchini slices in flour, ensuring each piece is evenly coated. Next, quickly dip them into ice water—this step will help maintain their crispness.
    4 Finally, fry the slices in hot oil (350F)until golden and crispy. This method ensures the zucchini retains a delightful crunch.
    5 Remove the zucchini chips from the oil and place them on a plate lined with paper towels to drain excess oil.
    6 Serve hot, optionally with a sprinkle of extra salt and a tzatziki sauce for dipping.

    For Tzatziki Sauce

    2 cups Greek yogurt
    1 medium cucumber, grated and drained
    2 cloves garlic, minced
    2 tbsp olive oil
    1 tbsp lemon juice
    1/2 tsp dry mint
    Salt and pepper, to taste

    ❂ Ingredients:

    Hoagie roll
    6 slices Prosciutto
    5 slices Salami
    5 slices Capicola
    5 slices Provolone cheese
    1 tsp Crushed Calabrian Chili Peppers
    For Marinated Zucchini:
    1 Zucchini
    2 Garlic cloves, minced
    1/2 tsp Italian seasoning
    1 tbsp Olive oil
    1 tbsp White vinegar
    1 tsp Salt
    1 tbsp Honey

    ❂ Cooking Process:

    -Preheat your oven to 350°F (175°C).
    -Slice the hoagie roll open from the top, making sure not to cut all the way through. Spread the chili pepper paste evenly on one side of the roll.
    - Place the prosciutto slices inside the roll, directly on top of the chili pepper paste. Next, layer the salami slices over the prosciutto. Finally, add the capicola slices on top of the salami.
    - Place the provolone cheese slices on top of the layered meats.
    - Place the sandwich on a baking sheet and bake in the preheated oven for 10-15 minutes, or until the cheese is melted and the sandwich is heated through.
    - After baking, remove the sandwich from the oven. Top it with marinated zucchini slices, if desired.
    - Serve the sandwich warm and enjoy!

    Recipe:

    ❂ Ingredients:

    2 Chicken breast
    1 Shallot onion
    2 Garlic cloves
    5 Sun-dried tomatoes
    1 Serrano pepper
    Olive oil
    1 tsp Lemon zest
    1 cup Heavy cream
    1 cup Chicken stock
    Fresh Basil sprig
    Dried Oregano
    Ground coriander
    Paprika
    Salt & pepper to taste
    Fresh parsley, chopped
    Linguine noodles

    ❂ Cooking Process:

    1. Preparing the Chicken:
    - Season the chicken breasts with salt, pepper, ground coriander, and a pinch of paprika on both sides.
    - Heat olive oil in a pan over medium heat.
    - Sear the chicken on both sides until golden brown, about 4-5 minutes per side, until fully cooked through. Once done, remove from the pan and set aside.
    2. Making the Puree:
    - In a blender, combine the sun-dried tomatoes, basil, shallot, garlic, lemon zest, Serrano pepper, and chicken broth. Blend until smooth.
    3. Cooking the Sauce:
    - Pour the puree into the same pan where the chicken was cooked.
    - Add 1 cup of heavy cream and bring the mixture to a gentle boil.
    - Reduce the heat and let the sauce simmer for about 5 minutes until it thickens.
    4. Pasta and Final Assembly:
    - Cook the linguine according to package instructions, then drain.
    - Add the pasta into the pan with the sauce, stirring well to coat the noodles evenly.
    - Slice the chicken breasts into thin slices.
    - Plate the pasta, top it with the sliced chicken, and drizzle with any remaining sauce.
    - Garnish with fresh parsley and basil.
