    ❂ Ingredients:

    230 grams of dried chickpeas
    1/2 tsp baking soda
    1 tsp salt
    180g. tahini
    Juice of half a lemon
    2 garlic cloves
    1 tsp cumin
    Salt and pepper to taste
    2-3 Tbsp Ice water
    Toppings: roasted garlic, smoked paprika, and parsley, olive oil

    ❂ Cooking process:

    Soak the Chickpeas:
    - Soak 230 grams of dried chickpeas overnight in plenty of water.
    Cook the Chickpeas:
    - Drain the soaked chickpeas and place them in a large pot.
    - Add enough water to cover the chickpeas, and stir in 1/2 tsp of baking soda and 1 tsp of salt.
    - Bring to a boil, then reduce the heat to a simmer.
    - Skim off any foam that forms on the surface.
    - Cook for about 40 minutes, or until the chickpeas are very soft and the skins start to separate.
    Prepare the Chickpeas:
    - Drain the chickpeas
    - Remove the skins from the chickpeas by gently rubbing them.
    Blend the Hummus:
    - Place the chickpeas in a food processor and blend them slightly.
    - Add 180g. tahini, the juice of half a lemon, 2 garlic cloves, and 1 tsp of cumin.
    - Season with salt and pepper to taste.
    - Blend the mixture, gradually adding ice water until you achieve a smooth and creamy consistency.
    Serve:
    - Garnish with roasted garlic, smoked paprika, chopped parsley and naan.
