  • Grilled Peach Burrata Salad

    Recipe here

    ❂ Ingredients:

    1 peach, cut into slices
    1/4 white onion, cut into thin strips
    Cherry tomatoes , halved
    2 cups arugula
    4 slices of prosciutto
    1 ball of burrata cheese
    Basil oil
    Salt and pepper to taste
    Balsamic glaze for drizzling

    ❂ Cooking process:

    Grill the Peaches:
    - Preheat your grill to medium-high heat.
    - Brush the peach slices lightly with olive oil.
    - Place the peach slices on the grill. Grill for about 2-3 minutes until they have nice grill marks. Flip and grill for another 2-3 minutes. Remove from the grill and set aside to cool slightly.
    Prepare the Salad:
    - On a large plate, lay out the sliced tomatoes and white onion strips. Season with salt and pepper, and drizzle with basil oil. Then, add the arugula.
    - Tear the prosciutto into smaller pieces and add them to the plate.
    Assemble the Salad:
    - Once the grilled peach slices have cooled, add them to the salad.
    - Tear the burrata cheese into smaller pieces and place them on top of the salad.
    Dress the Salad:
    - Drizzle the salad with basil oil.
    - Season with salt and pepper to taste.
    - Drizzle balsamic glaze over the top of the salad.

    1/2 ciabatta, cut into strips
    6 tbsp butter, melted
    Fresh parsley, chopped
    1 cloves garlic, minced
    Cayenne pepper and salt to taste
    Dressing:
    4 cloves garlic, minced
    3 anchovies, finely chopped
    2 egg yolks
    1 tbsp Dijon mustard
    1 tsp Worcestershire sauce
    50g Parmesan cheese, grated
    70g olive oil
    Juice of 1/2 lemon

    ❂ Cooking process:

    1. Prepare the Croutons:Preheat your oven to 350°F (180°C). Toss the ciabatta cubes with melted butter, minced garlic, chopped parsley, cayenne pepper, and salt. Spread on a baking sheet and bake for 10-15 minutes until golden and crispy. Set aside.
    2. Make the Dressing:In a bowl, whisk together the minced garlic, anchovies, egg yolks, Dijon mustard, Worcestershire sauce, and lemon juice. Gradually add the olive oil while whisking until the dressing thickens. Stir in the grated Parmesan cheese.
