• Grilled Salmon Kebab with Asparagus

    ❂ Ingredients:

    1 lb salmon, cubed
    1/4 cup soy sauce
    3 Tbsp honey
    Salt and pepper to taste
    Lemon, sliced
    Asparagus, trimmed
    2 garlic cloves, minced
    Olive oil
    Fresh chives, chopped

    ❂ Cooking process:

    Marinate Salmon and Asparagus:
    - In a bowl, mix soy sauce, honey, salt, and pepper. Add the salmon cubes and marinate for 20 minutes.
    - Cut the asparagus into bite-sized pieces. Toss with salt, pepper, minced garlic, and olive oil.
    Prepare Skewers:
    - Alternate salmon cubes and lemon slices on skewers.
    Grill:
    - Preheat the grill to medium-high. Grill the kebabs for 8-10 minutes, turning occasionally until the salmon is cooked through.
    Cook Asparagus:
    - While the kebabs are grilling, fry the asparagus in a pan over medium heat until tender.
    Serve:
    - Remove the kebabs from the grill and let them rest briefly. Serve with the sautéed asparagus and sprinkle with fresh chives.

  • Jalapeño Popper Grilled Cheese Sandwich

    3 jalapeños, halved and seeded
    5 slices of bacon
    1 bunch green onions, chopped
    4 oz (about 1/2 cup) cream cheese, softened
    1 cup shredded cheddar cheese (divided)
    1/3 mozzarella cheese
    2 slices of bread
    2 tbsp butter
    Salt and pepper to taste

    ❂ Cooking Process:

    Roast Jalapeños and Bacon:
    - Preheat your oven to 375°F (190°C).
    - Place the jalapeño halves on a baking sheet.
    - Arrange the bacon slices next to the jalapeños on the same baking sheet.
    - Bake for about 10-12 minutes until the jalapeños are tender and slightly charred, and the bacon is crispy.
    - Remove from the oven, let cool, then chop the roasted jalapeños and crispy bacon into small pieces.
    Prepare the Filling:
    - In a bowl, combine the chopped green onions, roasted jalapeños, crispy bacon, softened cream cheese, and half of the shredded cheddar cheese.
    - Mix well and season with salt/pepper to taste.
    Assemble the Sandwich:
    - Spread the butter only one side of bread slice.
    - Take the other side of one bread slice and spread the cream cheese filling evenly over it.
    - Place the other slice of bread on top, buttered side up.
    Grill the Sandwich:
    - Heat a skillet over low heat.

    Grill the Peaches:
    - Preheat your grill to medium-high heat.
    - Brush the peach slices lightly with olive oil.
    - Place the peach slices on the grill. Grill for about 2-3 minutes until they have nice grill marks. Flip and grill for another 2-3 minutes. Remove from the grill and set aside to cool slightly.
    Prepare the Salad:
    - On a large plate, lay out the sliced tomatoes and white onion strips. Season with salt and pepper, and drizzle with basil oil. Then, add the arugula.

    3 anchovies, finely chopped
    2 egg yolks
    1 tbsp Dijon mustard
    1 tsp Worcestershire sauce
    50g Parmesan cheese, grated
    70g olive oil
    Juice of 1/2 lemon
