• Chicken Katsu with Glazed Carrots

    ❂ Ingredients:

    2 boneless, skinless chicken breasts
    Salt and pepper, to taste
    1 Tsp Paprika
    1 Tsp garlic powder
    1/4 cup all-purpose flour
    2 large egg
    2 cup panko breadcrumbs
    Vegetable oil, for frying
    Sauce: ketchup, Worcestershire sause, oyster sauce and brown sugar

    For glazed carrots:
    1 lb rainbow carrots, peeled and trimmed
    2 tablespoons olive oil
    Salt and pepper, to taste
    2 tablespoons butter
    2 tablespoons brown sugar
    2 cloves of garlic
    Fresh parsley, for garnish

    ❂ Cooking Process:

    - Cook Carrots: In a pan over medium heat, melt the butter. Add carrots, add a little water and cover with a lid to soften it faster.
    - Glaze: Add garlic, then add brown sugar and a pinch of salt/pepper. Cook, stirring, until carrots are glazed and tender. sprinkle with a fresh parsley.
    - Serve: Enjoy warm as a side dish.

    ⁃ Cut chicken breast in half, 0.5 inch thick. Beat lightly.
    ⁃ Mix flour, eggs and seasonings
    ⁃ Dip in a batter, coat in panko.
    ⁃ Fry in oil (350F) until golden, about 3-4 min per side.
    ⁃ Serve sliced w side dish and sauce.

    ❂ Ingredients:

    4 Fresh Red Bell Peppers
    2 Shallot onion
    1 a Head of garlic
    Olive oil
    1 cup Heavy Cream
    Red Chili Flakes
    Dry Italian seasoning
    Salt/Pepper to taste
    1 Tbsp Tomato paste
    1 Tbsp Butter
    400g. Giant Fusilli Pasta

    ❂ Cooking Process:

    ⁃ Prepare the Roasted Red Peppers: Cut the peppers and onions into slices, cut off the top of the garlic and place in a baking dish, pour in oil and sprinkle with seasonings. Bake in the oven for about 1 hour until done (350 F).
    ⁃ Cook the Pasta: Boil the pasta in salted water until al dente, reserving some pasta water for later.
    ⁃ Make the Sauce: Transfer the prepared baked peppers with onions and garlic to a blender, add cream and a little pasta water, beat until smooth.
    ⁃ Combine: In a heated braiser, melt the butter and mix with tomato paste, adding a little water from the paste, then pour in the sauce. Mix the cooked pasta with the creamy roasted red pepper sauce, adjusting the consistency with reserved pasta water as needed.
    ⁃ Serve: Garnish with fresh basil and additional burrata cheese before serving.

    ❂ Ingredients:

    230 grams of dried chickpeas
    1/2 tsp baking soda
    1 tsp salt
    180g. tahini
    Juice of half a lemon
    2 garlic cloves
    1 tsp cumin
    Salt and pepper to taste
    2-3 Tbsp Ice water
    Toppings: roasted garlic, smoked paprika, and parsley, olive oil

    ❂ Cooking process:

    Soak the Chickpeas:
    - Soak 230 grams of dried chickpeas overnight in plenty of water.
    Cook the Chickpeas:
    - Drain the soaked chickpeas and place them in a large pot.
    - Add enough water to cover the chickpeas, and stir in 1/2 tsp of baking soda and 1 tsp of salt.
    - Bring to a boil, then reduce the heat to a simmer.
    - Skim off any foam that forms on the surface.
    - Cook for about 40 minutes, or until the chickpeas are very soft and the skins start to separate.
    Prepare the Chickpeas:
    - Drain the chickpeas
    - Remove the skins from the chickpeas by gently rubbing them.
    Blend the Hummus:
    - Place the chickpeas in a food processor and blend them slightly.
    - Add 180g. tahini, the juice of half a lemon, 2 garlic cloves, and 1 tsp of cumin.
    - Season with salt and pepper to taste.
    - Blend the mixture, gradually adding ice water until you achieve a smooth and creamy consistency.
    Serve:
    - Garnish with roasted garlic, smoked paprika, chopped parsley and naan.

    800g. Farmer cheese
    2 Eggs
    4 Tbsp Sugar
    4 Tbsp Semolina
    2 Tbsp All Purpose Flour
    Vanilla powder
    Pinch of salt
    400g. Fresh Cherry
    For filling:
    200 g. Cream cheese
    1 Egg yolk
    40g. Sugar
    Butter

    ❂ Cooking process:

    1 Preheat Oven: Preheat your oven to 375°F (190°C).
    2 Prepare : Mix the farmer cheese, eggs, semolina, flour, sugar, salt, and vanilla powder until smooth. Roll the mixture into balls weighing 75-80 grams each. And set aside for 30 minutes.
    3 Prepare cherries : Wash the cherries and cut them in half, removing the pits. Lightly sprinkle with sugar. (Optional)
    4 Prepare filling: Beat the cream cheese with sugar using a mixer, then add the egg yolk and mix again. If desired, you can add lemon juice or zest.
    5 Make a baskets: Generously grease the baking mold with butter. Place a rolled farmer cheese ball into each mold cavity. Then, using a glass or your hands, shape the balls into little baskets. Fill each basket with the cream, but not to the top, and place the cherries on top. Baked 25-30 minutes. It’s important not to overbake, so the baskets remain tender and juicy.
